Fuel your week with these champion flapjacks! 💪 Whip up a batch this Sunday, and you’ve got tasty, energy-boosting snacks ready to grab whenever you need a pick-me-up. Packed with oats, seeds, and Enriched eggs, they’re the perfect balance of goodness and flavour.

Make ahead:
Preheat oven to 180°C and grease a 20cm tin. Soften 150g chopped dates with water, then set aside. Melt 100g butter, 100g almond butter, and 150ml maple syrup. Mix 50g seeds, 50g chopped nuts, and 250g oats, then stir in 1 beaten Enriched egg and melted butter. Press half into tin, spread dates over, then add the rest. Bake for 20-25 mins, cool, slice, and enjoy!

Smash your Saturday with this oh-so-good Okonomiyaki! Packed with protein, veggies, and bursting with flavour, it’s the perfect fuel for a busy weekend. Quick to make, even quicker to devour. Get cracking! 🍳💪

How to make:
Whisk 2 Enriched eggs, 150g flour, 1 tsp baking powder, 1 tsp soy sauce, and 150ml water into a batter. Stir in ½ finely sliced cabbage and the whites of 4 spring onions. Heat 1 tbsp oil in a pan and cook half the mix for 6-7 mins on each side. Repeat with the rest. Mix 1 tbsp honey, 2 tbsp ketchup, and 2 tsp soy sauce for the dipping sauce. Brush pancakes with sauce, drizzle mayo, and top with pickled ginger, sesame seeds, chilli, and spring onion greens. Enjoy with extra sauce!

🥚 Fit Fuel Friday is here!
Each week, we’re serving up a high-protein recipe to power your fitness journey. This week, elevate your meal prep with our Total Tortilla – a delicious twist on the classic Spanish dish, supercharged with wholesome ingredients for that little ‘eggstra’ boost you need. Perfect for a hearty, fitness-focused diet, serve it with a crunchy kale salad topped with toasted seeds for a complete meal!

Ingredients:
6 tbsp extra virgin olive oil
2 onions, thinly sliced
500g waxy potatoes, thinly sliced
8 Enriched eggs, beaten
125g kale, washed and stalks removed
½ small red onion, finely chopped
2 tbsp cider vinegar
1 tbsp extra virgin olive oil
2 tbsp mixed seeds, toasted

Method:
Heat 2 tbsp oil, add onions, and cook until golden.
Cook potatoes in remaining oil until tender, then mix with onions.

Stir in beaten eggs, season, and pour into the pan. Cook on low for 10-12 mins.

Flip the tortilla, cook another 5 mins, cool, and serve.

For the kale salad, toss kale and red onion with vinegar, oil, and season. Top with seeds.

It’s time for MAKE IT LEAN MONDAY! 💪

This week we’re adapting our ‘Jammy Ramen’ recipe by swapping out the chicken for turkey. Why? Not only is it much leaner, but it’s a great source of selenium supporting your immune function, and niacin essential for your energy metabolism.

Recipe below 👇

Ingredients:
15g dried mushrooms
2l boiling water
4 Enriched eggs
1 tablespoon groundnut oil
1 large onion, finely sliced
6 cloves garlic, roughly chopped
3cm piece fresh ginger, finely grated
400g mixed mushrooms (oyster, shiitake or other exotic mushrooms)
2 tablespoons white miso paste
1 tablespoon tahini
2 tablespoons low-salt soy sauce
1 tablespoon mirin
200g ramen or fine egg noodles
150g leafy seasonal greens, finely sliced
200g leftover cooked turkey
2 tablespoons sesame seeds, toasted
Coriander leaves, lime wedges, sliced chilli or chilli oil, to serve

Method:
Soak dried mushrooms in 2L boiling water. Set aside.

Heat the oil in a large deep-frying pan or wok over a medium-low heat. Add the onion and garlic, cover with a lid and cook for 15 mins, stirring regularly. Remove the lid, add the ginger, and cook for a final 10 mins, until beginning to caramelise.

Meanwhile heat a large frying pan over a high heat. Dry fry the mushrooms for around 5 mins, in batches until all the moisture has been released and they are beginning to char. Remove to a plate and drizzle over 1 tablespoon soy.

Finely chop the soaked mushrooms and put to one side. Pour the mushroom water over the softened onions. Bring to a simmer and reduce the heat to low.

Combine the chopped soaked mushrooms, miso paste, tahini, soy sauce and mirin in a bowl with 1 tablespoon broth. Whisk into the broth and keep on a low heat as you cook the eggs.

Boil 2 eggs for 7 mins until jammy and soft. Drain, cool, then peel.

Add noodles & greens to broth; cook for 2-3 mins. Stir in leftover turkey to reheat for a few minutes.

Divide the noodles and broth between the bowls. Top with the charred mushrooms and halved boiled eggs. Finish with toasted sesame seeds, coriander leaves, red chilli, and a squeeze of lime juice.

Method: Grill salmon. Sauté onion, garlic, ginger, and coriander stalks. Add spices, spinach, peas, and rice. Poach eggs. Serve with salmon flakes, poached eggs, coriander, and lemon. Enjoy with chutneys and poppadoms!
