Ultimate boiled eggs

Ingredients

  • 4 Enriched +Mutli Vit eggs
  • 30g mixed seeds, toasted
  • 1 tablespoon hazelnuts, toasted
  • 1 teaspoon chilli flakes or smoked paprika
  • A pinch of sea salt
  • A pinch of black pepper, ground
  • 1 tablespoon tahini
  • 100g frozen edamame beans, defrosted
  • 2 avocados, stones removed
  • Juice of 1 lemon

Method

  1. Boil the eggs for 8 mins, until jammy and soft, then run under cold water and peel.
  2. Using a pestle and mortar, crush the toasted seeds, hazelnuts, chilli and a generous pinch of salt and pepper, until coarse, then tip into a shallow dish. Brush the peeled eggs with tahini, then roll in the crushed seed mix.
  3. Cook the edamame beans for 3 minutes, until just cooked. Drain and run under cold water, then tip into a food processor along with the avocado flesh and lemon juice. Season with salt and pepper and blitz until smooth, then pour into a bowl.
  4. Cut the eggs in half and enjoy them dipped into the edamame and avocado.
