How do you like your eggs in the morning? We like ours on top of smashed avocado and sourdough bread. It’s a tasty combination that is quick and easy to put together. We’ve given this satisfying favourite an energising upgrade with our vitamin-enriched eggs.

  • 1 Enriched +Energise egg (2 if you prefer)
  • 1/2 large avocado
  • 1 slice of sourdough bread
  • Sea salt and black pepper
  • Extra virgin olive oil, for drizzling
  • A wedge of lemon (optional)
  • Simple watercress and tomato garnish (optional)


  1. Take the flesh of the avocado from the skin, transfer to a small bowl and mash with a fork.
  2. Toast the sourdough bread.
  3. Cook the egg to your liking, we recommend a deliciously poached egg.
  4. Spread the avocado on the sourdough. Squeeze over some lemon juice, if you are using it, and drizzle with some extra virgin olive oil.
  5. Top the avocado toast with the Enriched egg and season well with sea salt and black pepper.
  6. Garnish with a simple salad if you prefer and enjoy!
