Smashed avocado and eggs
How do you like your eggs in the morning? We like ours on top of smashed avocado and sourdough bread. It’s a tasty combination that is quick and easy to put together. We’ve given this satisfying favourite an energising upgrade with our vitamin-enriched eggs.

Ingredients
- 1 Enriched +Energise egg (2 if you prefer)
- 1/2 large avocado
- 1 slice of sourdough bread
- Sea salt and black pepper
- Extra virgin olive oil, for drizzling
- A wedge of lemon (optional)
- Simple watercress and tomato garnish (optional)
Method
- Take the flesh of the avocado from the skin, transfer to a small bowl and mash with a fork.
- Toast the sourdough bread.
- Cook the egg to your liking, we recommend a deliciously poached egg.
- Spread the avocado on the sourdough. Squeeze over some lemon juice, if you are using it, and drizzle with some extra virgin olive oil.
- Top the avocado toast with the Enriched egg and season well with sea salt and black pepper.
- Garnish with a simple salad if you prefer and enjoy!
