Power-up pancakes

Ingredients
- 150g frozen cherries
- 1 tablespoon maple syrup, plus extra for drizzling
- 100g rolled oats
- 2 Enriched +MULTI-VIT eggs
- 80g cottage cheese
- 1 ripe banana, mashed
- ¼ teaspoon baking powder
- A small pinch of ground cinnamon
- 2 tablespoons milk (dairy or non-dairy)
- 1 teaspoon coconut oil
- 1 tablespoon cherry compote
- 2 tablespoons low-fat Greek yoghurt, to serve
- 1 tablespoon smooth almond or peanut butter, to serve
Method
- Cook the cherries and maple syrup in a saucepan on a medium heat for 5-10 minutes, until softened and juicy, then pour into a bowl and place to one side.
- Blend the oats until fine, then whisk in with the vitamin-packed eggs, cottage cheese, mashed banana, baking powder and cinnamon. Add the milk to loosen and blend again.
- Heat the coconut oil in a large, non-stick pan over a medium heat, then add the batter to the pan and cook for 2-3 minutes, flipping each pancake over when bubbles appear.
- Serve the pancakes with the cherry compote, a spoonful of yoghurt, plus a drizzle of maple syrup and nut butter.
