Ingredients
- 2 Enriched eggs
- 2 tablespoons light mayonnaise
- 1 tablespoon 0% fat Greek yoghurt
- 1 teaspoon Dijon mustard
- ½ stick of celery, finely chopped
- 1 punnet of salad cress
- 2 slices sourdough or wholegrain bread
Method
- Boil your Enriched eggs for 10 minutes in a pan of bubbling water until hard-boiled. Drain and run under cold water and then peel.
- Finely chop the eggs and mix with the light mayonnaise, Greek yoghurt, mustard, and celery. Season to taste.
- Spread the egg mix on one slice of bread before topping with the cress and putting the other slice of bread on top.
- Cut in half and enjoy!
