Mediterranean Muscle Melts

Ingredients
- 225g cottage cheese
- 2 Enriched MULTI-VIT+eggs
- 20g Parmesan, grated
- 1 garlic clove, peeled
- 2 tablespoons olive oil
- 2 courgettes, trimmed and finely sliced
- ½ teaspoons chilli flakes
- 2 garlic cloves, finely sliced
- 1 large ripe tomato, sliced
- 125g mozzarella
- 4 sprigs fresh basil
Method
- Preheat the oven to 180ºC/160º fan. Line a medium baking tray with non-stick baking paper.
- Place the cottage cheese, eggs, grated Parmesan and garlic into a bowl of a food processor. Season and blend for around 1 min until smooth and combined.
- Pour onto the tray and spread out evenly. Bake for 25-30 mins, until lightly golden.
- Remove from the oven and leave to cool completely.
- Meanwhile, heat the oil in a large frying pan or saucepan over a medium heat. Add the courgettes, chilli and garlic; cook gently for 20 mins, stirring regularly until softened and golden. Leave to cool slightly.
- Pile some of the courgettes onto half of the flatbread, arrange the sliced tomato and tear over the mozzarella. Tear some basil sprigs on top with a twist of black pepper. Fold over the other half and enjoy.
