Killer Kimchi scrambled eggs

We’ve switched up our staple scrambled eggs, by giving them some gut-boosting kimchi love – check out our ‘Killer Kimchi’ recipe by clicking here, you only need a couple of tablespoons to give a true nutritional kick to your usual protein-packed scramble brekkie, brunch or lunch, or whenever you fancy ‘munch’.

Ingredients

  • 4 Enriched Eggs
  • A knob of unsalted butter
  • 1 ½ tablespoons olive oil
  • A couple of tablespoons of kimchi, to stir through

Method

  1. Whisk the eggs together in a bowl and season lightly.
  2. Melt the butter with ½ tablespoon of olive oil in a non-stick frying pan over a medium heat. Pour in the eggs and use a whisk to keep it moving whilst it cooks to your liking.
  3. Simply finely chop a couple of heaped tablespoons of kimchi and stir through your scrambled eggs before enjoying piled onto a buttered bagel.
