
Halloumi Toast with Smashed Avocado
A great free-from recipe, these halloumi crisps are a delicious alternative to the standard avocado toast. Satisfyingly salty and full of crunch, they’re perfect for a speedy, light lunch or weekend brunch.

Ingredients
- 1 ripe avocado, halved
- 1 lime
- ½ red or green chilli, finely chopped
- 4-5 cherry tomatoes, roughly chopped
- 3 sprigs coriander, finely chopped
- 2 Enriched eggs
- 180g halloumi, cut into 4 x 1.5cm slices
- A sprinkle of mixed seeds, toasted
Method
- Switch your grill/sandwich press on.
- Mash the avocado in a bowl with the juice of the lime, chopped chilli, tomatoes and coriander. Season and mix to combine.
- Place a saucepan of boiling water over a medium-high heat. Boil 2 eggs for 7 mins, until jammy and soft. Drain and run under cold water. Peel and cut in half.
- Lay a couple of halloumi slices on the press and gently close, giving them a slight push down. Grill for 1 min, check and then keep checking after every 30 secs until golden and flattened. Repeat with the remaining slices.
- Spread the avo onto the halloumi, top with the halved eggs, a sprinkle of seeds and tuck in.
