Grated Egg Game-changer

The viral ‘grated egg toast’ has been a complete game-changer at Enriched HQ. It feels so filling and fluffy, takes minutes to do, and brings a new energy to our protein-fix staple of boiled eggs on toast.

Ingredients

  • 2 Enriched eggs
  • 1 slice bread
  • Extra toppings of your choice – we like sliced tomatoes, mashed avocado, some grated Parmesan

Method

  1. Simply place a saucepan of water over a high heat and bring to a boil. Add the eggs and boil for 9/10 mins, until hard boiled. Drain and run under cold water or plunge into a bowl of iced water to cool right down. Peel and allow to cool completely. You can boil your eggs a day before eating if you have the time. Just store the peeled eggs in the fridge, peeled or unpeeled.
  2. Toast the bread and prep any extra toppings you like.
  3. Now simply grate the peeled hard-boiled eggs over the toast. Season and finish with a final grating of Parmesan cheese (optional).
