Fiery Ginger Loaf

Ingredients

  • 2 +MULTI-VIT Enriched eggs
  • 2 bags Ginger Boost Tick Tock tea
  • 150ml vegetable oil
  • 1 teaspoon bicarbonate soda
  • 5 Medjool dates
  • 200g plain wholewheat flour
  • ½ teaspoon ground ginger
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 100g dark muscovado sugar
  • 2 ripe pears, grated
  • 60g stem ginger in syrup

Method

  1. Pre-heat the oven to 170°C/150°C fan. Line a loaf tin with greaseproof paper.
  2. Place the dates in a small bowl along with ½ teaspoon of bicarbonate of soda, the Ginger Boost tea bags and enough boiling water to cover. Put to one side.
  3. Meanwhile in a mixing bowl, whisk the flour, extra ½ teaspoon of bicarbonate of soda, ground ginger, baking powder and salt together.
  4. In another bowl, whisk together the oil, +MULTI-VIT eggs and sugar. Stir through the pears. Pour this mix into the dry ingredients and fold.
  5. Remove the tea bags from the date mixture. Add the dates to the batter with enough water to loosen.
  6. Pour into the lined loaf tin and bake for around 50 minutes, until a skewer comes out clean.
  7. When the cake is ready, leave it in the tin for 5 minutes before removing to a cooling rack. Pierce the top evenly with a skewer and then drizzle over the stem ginger and syrup. Leave to cool completely before slicing.
  8. Tuck in and enjoy with a cup of Ginger Boost tea!
