Easy Peasy, Cottage Cheesy

Easy peasy, cottage cheesy! Only got 15 minutes to fit in a quick, protein-packed meal? Bust out the airfryer for this simply delicious baked egg recipe that will not only have your tastebuds tingling (thanks to the added chives and zesty lemon) but also gives you that vit-A boost thanks to the spinach, and a hit of omega-3 with the smoked fish on top.

Ingredients

  • A drizzle of olive oil
  • 35g baby spinach, washed
  • 50g cottage cheese
  • 2 Enriched eggs
  • A couple of sprigs fresh chives, finely chopped
  • 1-2 slices whole grain bread
  • 1 fillet smoked mackerel or hot smoked salmon
  • ½ lemon, zest only

Method

  1. Heat the airfryer to 190°C.
  2. Lightly grease a small baking dish. Add the chopped spinach and spoon over the cottage cheese. Crack over the eggs, scatter with chives and season.
  3. Place in the airfryer and bake for 8-9 mins.
  4. Meanwhile, toast the bread.
  5. Remove the eggs from the airfryer and gently break up the eggs to mix into the spinach and cottage cheese. Spread over the toast, top with flakes of smoked fish and a little lemon zest.
