Crispy Fried Eggs

Ingredients
- 2 tablespoons olive oil
- 4 Enriched eggs
- 2 spring onions, chopped
- A handful of tomatoes, chopped
- 1 small shallot, finely chopped
- A small bunch of coriander, chopped
- ½ red chilli, chopped
- 1 lime, juice only
Method
- Heat the oil in a large non-stick frying pan over a medium heat. When nearly smoking crack in the eggs. Allow to bubble and start to fry. Cook until the white is cooked with a runny yolk.
