Crispy Fried Eggs

Ingredients

  • 2 tablespoons olive oil
  • 4 Enriched eggs
  • 2 spring onions, chopped
  • A handful of tomatoes, chopped
  • 1 small shallot, finely chopped
  • A small bunch of coriander, chopped
  • ½ red chilli, chopped
  • 1 lime, juice only

Method

  1. Heat the oil in a large non-stick frying pan over a medium heat. When nearly smoking crack in the eggs. Allow to bubble and start to fry. Cook until the white is cooked with a runny yolk.
