Banging Breakfast Muffin
Up your weekend breakfast game in under 15 minutes with these homemade muffins. Skip the ultra-processed junk from fast food joints and make these bad boys yourself. Packed with a large portobello mushroom for some extra vitamins alongside our supercharged MULTI-VIT eggs, these muffins are as filling as they are flavourful. Ingredients
- 2 portobello mushrooms, trimmed and cleaned
- 1 tablespoon olive oil
- 4 rashers smoked back bacon
- 2 garlic cloves, finely sliced
- 2 Enriched eggs
- 2 English muffins, halved
- A knob of unsalted butter
- 2 slices mature cheddar or Emmental
Method
- Preheat the grill to medium-high. Line a tray with foil.
- Place the mushrooms on the tray stalk side down and drizzle with ½ tbsp olive oil. Lay the bacon on the other side of the tray. Grill for 3-4 mins. Flip and top the mushrooms with sliced garlic and grill again for a further 3-4 mins until the bacon is crispy and the mushrooms are golden.
- Heat the remaining oil in a small frying pan over a medium heat. Place a large round cookie cutter in the pan, crack the egg in and fry the eggs for 2-3 mins, until the white is set with a runny yolk. Repeat with the other egg.
- Butter the muffin halves. Lightly toast the muffins cut side up under the grill. Top 2 muffin halves with the cheese slices and return to the grill for 1 min until melted.
- Top the cheese with the egg, mushroom and bacon. Finish with the other muffin top.
